Paleo Strawberry Chocolate Brownie Pie





As I promised....here is the recipe for this yummy pie.   Enjoy!

For the crust.

½ cup (70 g) Sunflower Seed Butter
3 tbsp (18 g) coconut flour
¼ cup (60 ml) pure maple syrup
1 tsp pure vanilla extract
1 tsp baking soda
¼ cup (60 ml) almond milk
3 tbsp (15 g) cocoa powder
1 tbsp (7 g) grass-fed gelatin (the variety that congeals)
¼ cup (56 g) enjoy life chocolate chips (melted)

Mix all of the ingredients in a bowl and stir to combine well. Lightly grease a 9 inch pie plate with your preferred cooking fat and spoon the mixture into the dish. Press the batter into the dish until distributed evenly. Bake at 350 degrees for 10 to 15 minutes.

For the Filling.

1½ cup enjoy life chocolate chips, melted
3/4 cup coconut oil, melted
1½ cup almond milk
3 tsp 100% vanilla extract
Pinch salt
1 tbsp maple syrup
1 medium avocado, peeled and pitted

Combine all ingredients in a blender until lump free. Spoon the mixture into the prepared pie crust.   Refrigerate for 2 hours.

Top pie with halved strawberries.
